The flour is bolted. The eggs are washed, disinfected, passed through a cold water jet. The bicarbonate is bolted.
The cottage cheese is blended with the flour, eggs, powder sugar, bicarbonate, grated lemon, semolina and salt. From this composition we make cheese pancakes with a round form, pressed in the middle and fried in oil. They are puffed with powder sugar. They are served with milk cream and comfiture on top.
