The gizzards are cleaned, washed and cut into pieces. The onion is peeled, washed and chopped. The green pepper is peeled, washed and cut into slices. The tomatoes paste is diluted in water. The tomatoes are washed, peeled and sliced.
The gizzards are braised in oil and water. We add the water and half boil them. The onion and the green peppers are braised in oil and water. We add the tomatoes juice and the tomatoes. They are boiled and we add the gizzards, the pepper and the salt. They are boiled for roughly 40 more minutes. At the end of the treating we add the wine.
